By organizing this conference, CoRFiLaC wants to make a statement on the importance of the World�s Traditional Cheeses, and have the mass media recognize how this reality is extraordinarily present not only in the Emerging countries, but also in the West. In fact, although the processes of globalization are very advanced, the West does not want to lose the historical and cultural roots of its rural world. These traditions have been handed down for generations, and reveal the identity of a people, territory, while respecting the environment and the natural processes. France, as well as, United States are witnesses to this. CoRFiLaC is proud to organize this conference in collaboration with the Vermont Institute of Artisan Cheese of Vermont University. The presence of scholars and rural communities of more than 15 countries�of the Mediterranean areas and beyond�attests to the importance these realities socially and culturally.
